INGREDIENTS:
2 diced cooked beets
1 can chunked pineapple, drained
1 large or 2 small red apples, diced
2 oranges, cut in pieces
1 or 2 bananas, thick slices
sugar, may be used if desired
2 carrots, grated or fine strips
1/2 c. Spanish peanuts
Toss together: beets, pineapple, apples, oranges and
bananas. Line a large round platter with lettuce. Pile tossed
mixture onto the platter. Garnish as follows: sprinkle over
top carrots, and Spanish peanuts and if desired, the beautiful
red seeds of a pomegranate.
