INGREDIENTS:
A tablespoon of oil
2 finely chopped garlic cloves
An egg
6 ounces of lean pork, ground. Do not substitute hamburger
A half pound of soaked Sen Yai noodles*
A few good sized sprigs of brocolli
A tablespoon of dark soy sauce
The same of light soy sauce
A dribble of sugar
A couple of tablespoons of nam pla*
White pepper, although black will do
PREPARATION:
Heat the oil in your wok, over high heat. Sautee the garlic. Add the pork, and stir til it is nearly done. Break the egg into this, stirring briskly. Then add the noodles, and then the broccoli, stirring after each addition. Do the same with the other ingredients, stirring after each one. Put it into a serving dish, and if want, you can add hot peppers.
This is cooked really quickly. Do not let the noodles stick.
