PREPARATION:
Cook sausage and break up into raisin size pieces. Set aside with cubed chicken and refrigerate.
In a large covered skillet, add the olive oil, scallions, garlic and bell pepper and saute for 3 minutes. Add the rice and saute for 2 minutes more. Add all the other ingredients except the green peas and bring to a boil. Lower heat to lowest setting and cook for 25 minutes. Add peas and cook for 2 minutes more.
