FRENCH ONION SOUP

Buzz's quick and easy method!



INGREDIENTS:

*2 large yellow onions, quartered and sliced very thin
*1/2 cube butter
*2 tblsp. olive oil
*1 strip bacon, chopped finely
*3 cups chicken broth
*1 tsp. nutmeg, freshly grated
*3 oz. grated white cheddar
*4 oz. Gruyere cheese, grated
*1 tsp. fresh ground pepper
*Kosher salt to taste

PREPARATION:
*In a large heated skillet, melt the butter with the oil and the chopped bacon.
*Add the onions and saute until carmelized to a light golden brown.
*Add the chicken broth and bring to a simmer.
*Add the white cheddar, the nutmeg, and the pepper and then adjust salt to taste.
*Simmer for 5 minutes. Ladle soup into oven-proof bowls, and divide the gruyere cheese on the top of the soup. Place under the broiler until cheese bubbles.
Serves 4
