CHEE CHEONG FUN (Dialect) OR ZHU CHANG FEN (Mandarin) - MEANS LITERALLY PIGS INTESTINE NOODLE BECAUSE THEY LOOK LIKE THAT

These are sticky rice hand made noodles, rolled up with various fillings inside and is a Chinese breakfast. More like a Chinese crepe.



The glutinous rice is mixed into a paste and spread into a thin layer and steamed into a very wide noodle. This noodle can be filled with either-or seafood (dried shrimp), chicken, pork, mushrooms, green onions and sauced with a sweet soy mixture and topped with toasted sesame seeds. It is eaten like a crepe or pancakes usually for breakfast.

INGREDIENTS:
For the glutinous rice noodle:  Serves 4

        •	2½ cups rice flour
	•	5 cups water
	•	1 tablespoon sesame oil
	•	2 tablespoons cooking oil
	•	¼ teaspoon fine salt

DIRECTIONS:

        1.	Mix ingredients together.
	2.	Pour a thin layer (about 1-2mm) into a microwave-safe flat container. ✯See Figure 1
	3.	Microwave on high for 2 min until just set.
	4.	Sprinkle your desired chopped up filling and roll up.**
	5.	Repeat steps 2-4 until you’ve used up all the batter.

        6.	*Serve with a sprinkle of soy sauce, chili sauce and sesame oil! (See Sweet Sauce as an
                 alternative)

*SWEET SAUCE
INGREDIENTS:

2 tbsp Mae Ploy Sweet Chili sauce
2 heaped tbsp creamy peanut butter
½ tsp garlic powder
1 tsp onion powder
1 tbsp soy sauce
½ tsp dark sweet soy sauce
¼ - ½ cup sugar
2 cups water

DIRECTIONS:

In a big microwavable bowl, combine the sweet chili sauce, peanut butter, garlic & onion powder,
soy sauce and dark soy sauce. Mix them well by adding a little water at a time. Finally add in all the
water. Simmer and reduce until thick and creamy.


COOKS NOTE** 
For the filling,  dice,  your choice, cooked pork,  chicken or shrimp,  green onions,  mushrooms,  water
chestnuts, pickled ginger,  pickled jalapeño circles and top off the noodles with toasted sesame seeds
jalapeño rings and/or cilantro.  Serve and enjoy.
