3 Tbsp. olive oil 1/2 c. chopped onion 1 clove garlic, minced 4 zucchini, thinly sliced 2 large tomatoes, chopped 1 tsp. salt pepper 1/2 tsp. oregano 2 c. cubed Mozzarella cheese 2 c. cooked spaghetti or 1 c. uncooked grated Parmesan cheese In a large skillet, heat oil until hot. Add onion and garlic and cook, stirring for 5 minutes. Add zucchini and tomato and cook, stirring for 5 minutes until zucchini is crisp-tender. Stir in salt, pepper, oregano, Mozzarella and spaghetti. Heat, stirring gently, until heated through and cheese starts to melt. Serve immediately with grated Parmesan. Serves 4.
