MEXICAN CHOCOLATE CAKE
An adaptation from Mario Bosquez INGREDIENTS: Serves 8-12 (A lot less around my place) • ¼ pound (1 stick) butter • ½ cup corn oil • 4 tablespoons dark cocoa • 1 cup water • 2 cups all purpose flour, unsifted • 1 teaspoon baking soda • 2 cups sugar • ½ cup buttermilk • 2 large eggs beaten • 1½ teaspoons Mexican cinnamon • ½ teaspoon cayenne or ground chipotle pepper • 1 teaspoon grenadine or pomegranate syrup • 1 teaspoon Tequila • 1 teaspoon vanilla extract ✚ GARNISH: Pecan halves or decorative hot chiles. DIRECTIONS: ✚ Preheat oven to 350ºF 1. Combine butter, oil, cocoa, and water in sauce pan. Heat until butter is melted. 2. Combine flour, baking soda, sugar, milk, eggs, cinnamon, tequila, chipotle, grenadine and vanilla in a large bowl. Combine with first mixture. 3. Pour batter into (2) 9 inch greased cake pans. Bake 25 to 30 minutes. Five minutes before the cake is done, prepare the icing. Let cake cool before you add the icing. 4. Addtional notes from Mario: Baking in a ceramic baker is best; serve from the bake pan and after you ice your cake encircle the edge of the cake with pecan halves. CHOCOLATE ICING - INGREDIENTS TO ICE THE CAKE: • ¼ pound or 1 stick butter • 4 tablespoons dark cocoa • 6 tablespoons milk • 3½ cups confectioners' powdered sugar**SEE COOKS NOTE-1** • 1 teaspoon vanilla extract • 1 cup chopped pecans DIRECTIONS FOR ICING: 1. STEP 1 Combine the butter, dark cocoa, and milk in saucepan. Heat until it simmers around edge. Remove from the heat. 2. STEP 2 Stir in vanilla extract and pecans. Add the confectioners' sugar to taste. Slowly pour over cake. **COOKS NOTE-1** 1. The sugar will take from ¾ pound to one pound depending on your taste. I like the lesser amount. **COOKS NOTE-2** 1. My wife baked this cake for me on my 82nd birthday and it literally was the best cake I ever ate. Moist, not too sweet, just enough heat to tickle my throat. A sensational cake.
