STEAMED LOBSTER TAILS
An "economical" way to enjoy steamed lobster occasionaly at home.
With the price of lobster today, it is not a dish you would prepare often at home. But most supermarkets sell frozen lobster tails "on sale" every so often that can be an alternative to steaks or other seafoods. This is a simple way to prepare and enjoy lobster on special occasions.

FOR THE LOBSTER:
✹ 2 10 oz. frozen lobster tails (can use 5 oz)
✹ 2 wooden skewers
1. With a pair of kitchen shears, carefully cut the top shell of the lobster tail from the head to the tail.
insert a wooden skewer through the tail from the front to the back tail fin. Cut the skewer at the head
end so only an inch of so remains visible for removal later.**SEE COOK'S NOTES**
PRE-STEAMING SAUCE: ⅓ cup mixture
✹ 2 Tablespoons butter
✹ 1 Tablespoon lemon juice
✹ ˝ teaspoon paprika
✹ ˝ teaspoon old bay seasoning
1. Pour this mixture through the cut top shell and down around the lobster meat before steaming.
✹ 2 whole garlic cloves
✹ Enough water to rise 2 inches from the bottom of a steamer tray insert
1. Fill a tight lid steamer pot with 2 Tablespoons salt, 2 garlic cloves and water up to 2 inches
from a steamer tray insert and bring to a boil. Place the lobster tails in the steamer basket and
steam for 8 minutes or until the shell is red and the meat is white. Remove from the steamer
and remove skewers and serve either with the shell on or off as to your preference. The lobster
will be very hot so be careful.
2. Serve with melted butter and lemon slices.
1. Some prefer not using a wooden skewer, but I find that often the lobster tail will curl up on you and
make it difficult to remove the shell, as well as a difficult presentation on the plate.
