Ingredients 1/2 cup lemon juice 3 large garlic cloves crushed 1 tablespoon minced shallot 1/4 teaspoon salt 1/2 teaspoon freshly ground black pepper 1-1/2 pounds large shrimp unpeeled Spinach leaves Lemon slices Directions 1. Combine first 5 ingredients in large bowl then mix in shrimp. 2. Marinate at room temperature 1 hour or in the refrigerator 5 hours stirring occasionally. 3. Prepare barbecue with medium hot coals. 4. Thread shrimp on narrow skewers then grill until just opaque about 2 minutes per side. 5. Line platter with spinach then arrange skewers on platter. 6. Garnish with lemon and serve.
