ARMENIAN PENIRLEE - CHEESE BREAD



This cheese bread is made throughout Asia Minor, Eastern Europe and the Balkans. It is usually filled with the favorite native cheese and many other toppings are added depending on the region. It can be filled with just a simple home-made cheese or vegetable to baked eggs. It is eaten for almost any meal. It can be sprinkled with sugar and eaten as a cheese filled "Danish".

ARMENIAN PENIRLEE - CHEESE BREAD

INGREDIENTS:Serves 6

 ●  1 packet dry yeast
 ●  1¼ cups warm water
 ●  4 - 5 cups all purpose flour
 ●  Cornmeal
 ●  ¼ cup whole milk
 ●  ½ pound Armenian cheese,  Greek Kasseri,  Pecorino Romano, or mild cheddar, crumbled or grated
 ●  6 eggs (optional)
 ●  1 large ripe tomato, sliced thinly (optional)
 ●  Butter as needed

DIRECTIONS - FIRST DAY: 

1.  Dissolve the yeast in 1½ cups of warm water and let it bubble up for about 20 minutes.

2.  Sift 4 cups of flour and the salt together. Make a well in the center and add the yeast mixture. Combine with a fork until a dough mass forms. Sprinkle a worksurface with some of the remaining  
     flour and knead, incorporating m ore flour as needed, until a smooth, soft dough forms. 

3.  Cover and let rise in a warm, draft-free place until doubled in bulk.

4.  Punch down the dough and divide into 6 equal pieces. Cover and let rise again until doubled.

✚  Preheat the oven to 400℉ 

5.  Lightly dust a baking sheet with cornmeal. 

6.  Grate the kasseri and mix in the milk.

7.  Take one ball at a time, flatten it into an oval and then shape into a thick "canoe", pinching it together to form points at both ends. 

8.  Add one-sixth of the cheese mixture. Add a slice or two of tomatoes and break an egg carefully into the center if desired.**SEE COOK'S NOTE**  Repeat with remaining ingredients. 

9.  Bake for about 15-20 minutes. Remove and immediately dot with butter. Serve hot.

COOKS NOTE* 
1.  You can also just fill it with nothing but the cheese mixture.  Some like a little sugar sprinkled on the cheese if they are having it without tomato or eggs.
