APPLE AND YAM PUREE

This goes well with pork, tuna, swordfish, catfish and a myriad of other dishes!



INGREDIENTS: SERVES 6
•2 pounds yams
•1 cup finely chopped onion
•2 large Granny Smith apples
•2 tablespoons unsalted butter
•3 tablespoons crème fraîche, sour cream or plain yogurt.
•freshly grated nutmeg to taste
•apple juice (hot) for thinning the purée if necessary

PREPARATION:
•Bake the yams in a 350 degree oven for about an hour, until soft. Peel core and slice thin the apples, and cook withthe onions and butter over moderate heat, stirring, for 5 to 10 minutes, or until the apples are very tender.

•Peel the yams and in a food processor purée them with the apple mixture until the mixture is smooth. With the motor running add the crème fraîche, the nutmeg, salt and pepper to taste, and enough apple juice to thin the puré to the desired consistency.
