PREPARATION:
•Bake the yams in a 350 degree oven for about an hour, until soft.
Peel core and slice thin the apples, and cook withthe onions and butter over moderate heat, stirring, for 5 to 10 minutes, or until the apples are very tender.
•Peel the yams and in a food processor purée them with the apple mixture until the mixture is smooth. With the motor running add the crème fraîche, the nutmeg, salt and pepper to taste, and enough apple juice to thin the puré to the desired consistency.
